    SCALLOPS IN CREME

    List of Ingredients

    1 1/2 lb. scallops (preferably large sea scallops)
    1/2 c. wine
    1/2 c. water
    individual puff pastry shells
    Parmesan cheese, freshly grated for topping

    Sauce:
    2 Tbsp. butter
    2 shallots or green onions, finely chopped
    1 1/2 Tbsp. flour
    1/2 c. cream

    Recipe

    Scallops: Put in saucepan with wine & water; cover. Bring to boil for 3 to 4 minutes; cook until tender. Drain and save the liquid; set aside.

    Sauce: Melt butter in pan, add chopped shallots and cook gently until lightly brown. Add flour and then strained cooking liquid; bring this to a boil while stirring constantly. Stir until thick. Add cream, stir in scallops.

    Place scallops and sauce in pastry puffs and sprinkle with Parmesan cheese and browned bread crumbs. Place under broiler for 4 to 5 minutes or until lightly browned.
