    Scallops With Bacon

    4 strips bacon
    1 lb. bay scallops
    4 green onions, chopped
    1/2 tsp. thyme
    1/4 sherry
    2 tsp. cornstarch
    1/4 cup water
    Hot cooked rice

    Recipe



    Cook bacon. Drain, crumble, set aside. Reserve half of bacon drippings.

    Add scallops, green onions, thyme, and sherry. Simmer 4 or 5 minutes until scallops are opaque.

    Combine cornstarch and water. Add to scallop mixture.
    Cook 1 minute.

    Serve with rice. Top with reserved bacon.
