1 lb. shelled, deveined, cooked baby shrimp
1/2 medium onion, minced
2 ribs celery, minced
1/4 c. mayonnaise
1 T. lemon juice, fresh squeezed
1/2 t. grated lemon peel
1/4 t. salt
fresh ground pepper to taste
4 whole wheat hotdog buns, split
1 large tomato, slicedRecipe
In medium bowl, combine shrimp, onion, celery, mayo, lemon juice, lemon peel, salt & pepper. Line buns with tomato slices; top with shrimp mixture.
*Substitute good quality lump crabmeat for a tasty variation.
