    Three Dips and a Shrimp Stick

    Ingredients: For the Marinade
    1 pound of medium shrimp (about 21-25) I made 10 sticks
    1/2 Tbs olive oil (used 2 Tbs)
    1 Tbs lemon juice
    1 clove of garlic, minced
    1/2 tsp oregano
    1 Tbs parsley

    Recipe



    Mix all well. Skewer 4-6 shrimp onto a skewer then pour the marinade over each one to coat. Marinade for 1 hour. (I placed the marinade and shrimp into a plastic bag and marinated several hours.)

    Broil or grill for about 4-6 minutes each side.

    The Spinach Dip
    2 tsp extra virgin olive oil
    1/2 small onion chopped
    1/2 cup chopped, thawed spinach
    1/2 cup plain yogurt

    Saute the onion in the olive oil. Do not stir, to aid the browning process. Add the spinach. Transfer to a small bowl and cool completely. Add the yogurt, and some salt and pepper to taste.

    The Pink Dip (Mix all together well)
    1/3 cup plain yogurt
    1 Tbs mayonnaise
    1 Tbs Ketchup
    1 tsp sweet paprika
    1 tsp lemon juice
    dash of hot pepper sauce

    The Honey Dijon Dip (Mix all together well)
    1 Tbs Dijon mustard
    1 Tbs whole grain mustard
    1/8 cup honey
    1/4 cup mayonnaise
    1 tsp lemon juice

The hardest part was, deciding on which Dip was best~~ Finallly decided that they all were very good and when all of the components are put together how pretty it will look. Thanks Nancy~~ Next picnic, I am going to impress a few people with this one~~ Dh liked the Honey Dijon Dip best, also remarked that the spinach one would be good on crackers~~Janie
