Corn Pudding with Bacon

8 sices bacon, cooked crisply
2 cups corn kernels
1/2 cup fresh bread crumbs
1/2 green bell pepper, finely chopped
1 medium onion, finely chopped
2 eggs, lightly mixed
2 cups whole milk
1 tsp. salt
dash of black pepper

Preheat your oven to 350ºF. Crumble the crisp bacon. Mix the bacon with the corn kernels and the fresh bread crumbs. In the skillet with the bacon drippings, saute the onion and green pepper for a few minutes. Add the cooled onion and pepper to the corn mixture. In a separate bowl, mix the eggs, milk, salt and black pepper. Pour over the corn mixture. Then place into a buttered casserole dish. Top with the buttered bread crumbs and bake for approximately 45 minutes until set.
