    Instant Potato Dumplings

    1 c instant Potato Buds (or flakes)
    1 c hot water
    1/2 t salt
    1 egg
    1 c flour

    Recipe



    Combine Potato Buds and hot water. Add rest of ingredients, in order given. Mix well. Form into 2" fingers or balls with hands. Flour hands occasionally so dough doesn't stick. Cook in boiling salted water till they rise to top. Remove dumplings from water with slotted spoon and place in buttered casserole dish. Sprinkle with bread crumbs and keep layering melted butter, dumplings and crumbs. Cover with foil and bake at 325° 5-10 minutes.

    Posted by: arelabs: I don't know too many people that don't like potato dumplings. Personally, I could eat them and fill up before even trying anything else! I've used this recipe many, many times to make little dumplings. The problem is, I eat most of them before they get to the table!! I make mine finger-tip size. I flour hands, pull out a ball of dough, roll it on a floured surface (dough gets sticky) into a long piece, and then just cut into uniform size. Very inexpensive to make, but they are just as good as the ones you get in the Polish deli's, which are VERY expensive! So, if you decide to make them, just make a whole big batch of them because they reheat very well, if you have any left. I do, however, do one recipe batch at a time. I don't know how the dough would double or triple, and it's just as easy to do a single batch at a time.
