    Total Time: 35 minutes — you use the same pot for all procedures.

    List of Ingredients




    1 1/2 lbs. small red potatoes, peeled
    4 T. butter
    optional: some garlic powder and chopped parsley and extra butter

    Recipe



    Parboil potatoes, peeled for 10 minutes; drain. (I didn't do that many potatoes) Melt butter in the pot over low heat.

    Add potatoes, cover; and cook 10 minutes over low heat. Swirl the pan occasionally to stir, holding the cover in place.

    Uncover and increase heat to medium-high. Saute 10 minutes, turning potatoes until golden brown on all sides. (I usually add some garlic powder and parsley now.)

    When done, remove from pan to serving bowl and if desired, toss with a little more butter and serve.
