Recipe Introduction
These literally "disappeared!!! It's a recipe from my cousin that I found in my family cookbook. The original recipe had 1 cup Spanish peanuts and 1 cup raisins. Since my family is not fond of raisins, I added 2 cups of peanuts. Hubby said he thought it wouldn't be as good with raisins, but it's an idea for you to try if you'd like.
List of Ingredients
1 cup brown sugar, packed
1/2 cup margarine or butter, softened
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
6 cups Cheerios cereal
2 cups salted Spanish peanutsRecipe
Preheat oven to 250 degrees. Grease two 9x13 inch pans or one 10 1/2 x15 1/2 jelly roll pan. Heat brown sugar, margarine, corn syrup, and salt in a 2-quart saucepan over medium heat, stirring constantly until bubbly around edges. Cook, uncovered, stirring occasionally 2 minutes longer. Remove from heat; stir in baking soda until foamy and light colored. Pour over cereal and peanuts in greased 4-quart bowl. Stir until mixture is coated. Spread evenly in pans. Bake 15 minutes. Stir; let stand just until cool, about 10 minutes. Loosen mixture with metal spatula. Let stand until firm, about 30 minutes. Break into bite-sized pieces. Makes about 10 cups snack.
