Fruit and Cookie Pizzas

Weight Watchers "Six O'Clock Solutions"; Store the remaining cookie dough in the freezer, so you can make this dessert at any time.
List of Ingredients
1 (18-ounce) package refrigerated sugar cookie dough
1/4 cup light ricotta cheese
1 t sifted powdered sugar
1/8 t vanilla extract
2 canned peach slices in juice, drained and cut into very thin slices
1 small kiwifruit, peeled and thinly sliced
2 t reduced sugar apricot spread, melted
Recipe
Preheat oven to 350ºF.
Cut 2 (1/2 inch thick) slices from dough; reserve remiaining dough for another use. Gently press each slice into a 4 inch circle on a baking sheet. Bake at 350 for 10 minutes or until golden. Let cool on pan 1 minute, and carefully remove from pan. Let cookies cool completely on a wire rack.
Combine cheese, powdered sugar, and vanilla extract in a bowl, and stir well. Spread cheese micture evenly over each cookie, and top with sliced peaches and kiwifruit. Brush each pizza with melted apricot spread. Serve immediately.
Yield 2 servings.
