    Mexican Cinnamon Crisps

    8 (6-in.) flour tortillas
    1/4 cup sugar
    1 Tbsp. cinnamon
    vegetable oil for frying




    Recipe

    Cut tortilla into 6 wedges each.

    In a small bowl, stir together sugar and cinnamon until well-mixed.

    In a large heavy saucepan or deep fat fryer, heat 4-inches of oil to 375ºF. Fry tortilla triangles, several at a time, 1 to 2 minutes, or until golden brown.

    With a slotted spatula, remove fried triangles to paper towels to drain. Immediately sprinkle with cinnamon sugar. Let cool completely.
