    2 cans (14 ½ oz. each) chicken broth
    1/2 cup finely chopped onion
    1 medium carrot, finely chopped
    3 cans (16 oz. each) whole potatoes, drained
    2 cans (16 or 17 oz. each) whole kernel corn
    1/2 cup half and half
    3 T. chopped parsley
    1 cup julienne-cut smoked ham

    Recipe



    In a 3 quart saucepan, combine broth, onion, and carrot, simmer 10 minutes. Add one can of the potatoes and one can of the corn to the saucepan contents. Put the contents in an electric blender in batches and puree until smooth. Return contents to the saucepan.

    Dice the remaining 2 cans of potatoes. Stir diced potatoes, the remaining one can of corn, and the half-and-half into the saucepan. Bring to a boil, reduce heat and simmer 5 minutes. Stir in parsley. Season with salt & pepper, if desired. Ladle into bowels, garnish with ham & additional chopped parsley.
