1 box Uncle Ben's Wild Rice Mix
1 qt. half and half
2 cans condensed Campbells cream of potato soup
2 cups cubed Velveeta
5 slices bacon, cooked and crumbled (I use the jarred real bacon)
Recipe
Prepare rice mix as directed on the box. Add half and half, soup and Velveeta. Heat on low until heated through and be careful not to scorch. Add bacon. Heat through. Serve.

It was a recipe I thought I would try so that I could use up my Uncle Ben's Wild Rice that had been in my cupboard forever. It turned into a favorite. I usually double the recipe, using a total of 2 lbs. of Velveeta plus double the other ingredients. I use the plastic package of Oscar Meyer crumbled (real) bacon (2 of them for a double batch). This makes it so easy and quick to throw together. Remember - do not add any salt or other seasonings until you add the bacon. Sometimes it seems to be a bit thicker than other times, I guess in how long I simmer. I've added a little skim milk to thin it out and it turns out fine. It is a thick, rich and hearty soup that tastes great with a light salad or some fruit! VERY comforting!
