    NEW ENGLAND POTATO-CORN CHOWDER

    3 strips bacon
    1 onion, chopped
    3 stalks celery, chopped
    5 medium potatoes, diced
    2 cups milk
    2 (5-ounce) cans evaporated milk
    2 cups corn kernels
    1 cup shredded Cheddar cheese
    1/2 teaspoon paprika

    Recipe

    In a large saucepot, fry bacon until crisp. Drain on a paper towel.

    Add onion and celery to bacon drippings; sauté for 4 minutes or until softened. Add potatoes; sauté for 10 minutes. Add milk and evaporated milk; bring to a boil. Simmer for 20 minutes or until potatoes are tender. Stir in corn, cheese, and paprika; cook for 5 minutes.

    Serve hot topped with crumbled bacon.

    (Yield: 4 servings)
