Potato Soup with Dumplings

Soup:
6 potatoes, cubed
2 onions, finely chopped
1 carrot, finely chopped
2 stalks celery, chopped fine
5 cubes of chicken bullion
1 tsp. parsley
2 quarts water
1 Tbsp. salt
1 tsp. pepper
1/2 cup butter
1 can evaporated milk (save for later) Recipe
Combine all ingredients except for the milk, cook one hour. Then in a bowl combine and mix:
Dumplings:
2 cups flour
1 egg
1 cup milk
1 tsp. salt
Drop flour, egg, milk and salt mixture by tsp. into boiling soup.
Cook for 45 minutes then take off heat, add evaporated milk, and serve.
You could add about 1 to 1 1/2 cups finely chopped ham which would really make this a meal in itself. Or you could use fried bacon in place of the ham.
