1 lb. lean stew beef (either finely diced or small cubes)
1 (8 oz) can tomato sauce
1 (15-16 oz) can Italian tomatoes (diced or stewed)
1 (15 oz) can corn, drained
1 (15 oz) can green beans, drained
2 large potatoes, diced
2 c. sliced carrots
Italian seasoning, salt, pepper to tasteRecipe
Brown the stew beef. Add water to cover the beef plus about another inch or two. Bring to a boil. Reduce heat and simmer for about an hour and a half on low heat. Add the potatoes and carrots. Cook for another 30 minutes or until potatoes and carrots are soft. Add remaining ingredients. Cook another 5 minutes or so until seasoning is incorporated.
My notes: I think I would add the tomatoes, tomato sauce & seasonings and let it cook longer than 5 mins. Just my preference.
