Spinach Chowder

2 c. cooked fresh spinach (or 1 can spinach)--dont' really see why you couldn't use frozen as well
3 medium potatoes
3 slices bacon
1/3 to 1/2 c. sliced white onions
3 T. flour
1 c. evaporated milk (I am thinking I might use light or fat free half and half)
salt to tasteRecipe
Drain spinach, save liquid. Chop spinach. pare and dice potatoes and boil until tender in salted water to cover. Drain (saving water). Saute bacon until done; remove bacon from pan. Cook onions in bacon grease until soft and yellow. Blend in flour; add milk, 3/4 c. of spinach liquid, and 1 c. water drained from potatoes. Then cook over direct heat, stirring constantly until sauce boils and thickens. Add spinach, potatoes, and salt; bring to boiling and simmer 5 minutes. Serve hot with drained crumbled crisp bacon dropped on top of each serving as a garnish. Makes 5-6 servings.
