    Asparagus wrapped with Prosciutto Ham

    1 pound fresh asparagus
    1/4 pound prosciutto ham, very thinly sliced

    Break off fibrous end of each asparagus spear, then use knife to cut spear bottom; set aside.

    In 10 by 12 inch skillet, heat 3 cups water to boil over high heat. Add asparagus spears, distributing evenly. Lower heat to medium and cook, uncovered, until tender and crisp, about 3 minutes. Drain off water, then quickly plunge asparagus into pan of ice water; chill until cold, about 15 minutes. Drain asparagus on paper towels.

    Cut each rectangular slice of prosciutto into thirds, lengthwise, trimming fat off edges, if desired. Wrap each third around an asparagus spear, pressing firmly to hold prosciutto in place. Arrange wrapped spears on serving tray.
