BAKED CREAMED SPINACH

2 Tbsp. butter or margarine
1 small onion, finely chopped
2 Tbsp. flour
Salt & pepper to taste
1 cup milk
2 eggs, separated
2 (10 oz.) pkgs. frozen chopped spinach, thawed and squeezed dryRecipe
Grease an 8x8” baking dish. Sauté onion in hot butter until tender, about 5 minutes. Stir in flour, salt & pepper until blended. Gradually stir in milk; cook, stirring, until sauce boils and is slightly thickened.
Preheat oven to 350 degrees. In small bowl, beat egg yolks slightly with fork. Into yolks, stir small amount of hot sauce; slowly pour yolk mixture into sauce stirring rapidly to prevent lumping. Cook, stirring constantly, until thickened (do not boil). Remove from heat; stir in spinach.
