Baked Squash Casserole (T&T)

A family favorite!
List of Ingredients
3 - 4 lbs. yellow squash
1 can cream of mushroom or celery soup
1 large onion, diced
1/2 c. milk
sharp cheese, grated
Ritz crackers, crushed
Recipe
Slice squash and cook in salted water until just tender. Drain.
Saute onion if desired. (I usually just put it in with the squash.)
Blend soup with milk.
In a buttered 2 qt. casserole dish, put a layer of squash, layer of soup, cheese then repeat layers.
Bake at 350º for 30 mins. Remove from oven and top with Ritz cracker crumbs. Return to oven for a few more mins.
Don't be stingy with the cheese! Happy Baking!
