Carrot Souffle

Recipe Introduction
This is our favorite side dish. We never have any leftovers. I ususally double this recipe and bake it in a bigger casserole dish.
List of Ingredients
1 lb. baby carrots
1/2 cup margarine, melted
3 eggs
1/4 - 1/2 cup sugar
3 Tbsp. flour
1 tsp. baking powder
1 tsp. vanillaRecipe
Cook carrots until tender in boiling salted water. Drain. Combine carrots and margarine in blender. Blend until smooth. Add remaining ingredients; blend well.
Pour into greased souffle or casserole dish. Bake at 350ºF for 45 minutes or until firm.
