Cauliflower, Bacon & Cheddar Casserole

1 head cauliflower = about 4 cups
4 strips bacon
2 green onions
1/2 cup sour cream
1/4 stick butter
1 clove garlic, minced
8 oz cheddar cheese, divided
salt and white pepper, to taste
Recipe
Cut up the cauliflower and steam/boil until soft. While the cauliflower is cooking, cut the bacon up into small pieces and fry.
Then chop the onion up fairly fine, including the green portion.
When the cauliflower is soft, drain well. Add the butter and sour cream. Use a mixer to mash the cauliflower until creamy.*(see review)
Add the bacon bits, green onion, garlic, salt, pepper, and half of grated cheddar. Mix well and pour into large casserole dish. Top with remaining 1/2 cup of cheese.
Bake at 350°F for 20-30 min, or until top begins to brown.

I added the last bit of broccoli, cooked them together and instead of mashing until really creamy, I left it kind of chunky. It is in the warming oven...waiting for them if there is any left to serve them! Thanks John for a great tasting recipe as always. The kids are lucky they just pulled in the driveway! Linda
