Eggplant Casserole

2 lbs. eggplant (peeled and diced)
2 beaten eggs
1/2 cup milk
1 onion, diced
1/2 lb. cheddar cheese, grated
32 Ritz crackers (crushed)
1/2 stick margarine
salt and pepperRecipe
Boil eggplant until tender. Drain well. Mix eggplant, onion, cheese, crackers, eggs and milk together. Add salt and pepper to taste. Put in a greased 1 1/2 quart casserole dish. Dot top with margarine.
Bake at 350° uncovered for 30 minutes until lightly browned.
