    Our Family's Eggplant Casserole (T&T)

    List of Ingredients




    1 medium - large eggplant, peeled & cubed
    bread crumbs
    chopped celery (maybe 1/2 c. or more)
    chopped onion ( " " " " " )
    chopped ham and/or chopped cooked shrimp
    1 egg (might need 2 eggs depending on size of eggplant), lightly beaten
    S & P to taste
    melted margarine

    I boil my eggplant cubes in water (halfway covering). You can salt the water or not...your preference. Cook until soft. I take a spoon and mash the eggplant; you don't want big pieces. Drain well. I saute my onions & celery in a little margarine. Then I mix eggplant, beaten egg, onion & celery, S & P, eyeball the amount of bread crumbs (you don't want alot to make it dry but enough...start with maybe 1/2 c. to 3/4 c. and see. Mix this well. Then stir in your ham and/or shrimp, about 1/2 c - 1 c. total. Pour into a greased casserole (approx. 1 1/2 qt - 2 qt). Top with more bread crumbs and drizzle with melted margarine.
