Panned Summer Squash

6 c. sliced summer (yellow) squash
3 T. bacon grease
salt & pepper to taste
1 medium onion, chopped
Recipe
In a cast iron skillet, heat the grease. Add onions and saute. Peel squash and slice. Add to skillet. Cover and cook for 10 or 15 minutes at moderate heat. Remove the cover and cook a little longer for the liquid to evaporate. Add salt and pepper to taste.
