Savory Creamed Spinach

1 1/2 lb spinach
3 T. butter
1 small onion, chopped fine
1/4 c. flour
3/4 t. salt
pepper to taste
1 1/2 c. milkRecipe
Wash and cook spinach. Drain; chop fine. There should be 1 1/4 to 1 1/2 cups (I don't see why you couldn't use frozen). Melt butter in saucepan; add chopped onion and cook until soft; blend in flour, salt, and pepper. Add milk and cook over direct heat, stirring constantly until sauce boils and thickens. Fold in chopped spinach and reheat if necessary. Serve hot. 5 servings.
