The Lady and Sons Broccoli Casserole

Recipe Introduction
This recipe comes from the lady and sons cookbook. It is so good and buttery and wonderful for buffets when you need an easy tasty side dish that can be made ahead. To make ahead, follow all instructions then refrigerate until ready to bake, but don't add topping until ready to put in the oven. (You will need additional baking time if its being baked cold from the fridge.) For a buffet, I double the recipe below.
List of Ingredients
One (10 oz pkg frozen chopped broccoli
1 small onion, diced
4 Tbls (1/2 stick) butter (no substitutes)
1/2 cup shredded cheddar cheese
1/2 cup crushed ritz crackers
1/2 cup condensed cream of mushroom soup
1/4 cup mayonnaise
garlic powder, salt and pepper to tasteRecipe
Preheat oven to 350ºF. Steam broccoli until limp. Remove from heat; drain. Saute onion in butter and add to broccoli. Add all remaining ingredients; mix well. Pour mixture into a sprayed casserole dish. Add topping.
Topping
1/2 cup crushed ritz crackers
1 Tablespoon butter, melted
Combine crackers and melted butter for topping; sprinkle on top of casserole. Bake for 25-30 mins.
