CRUST:
1 3/4 C. GRAHAM CRACKER CRUST
1/4 C. SUGAR
1/3 C. MARGARINE, MELTED
IN BOWL, COMBINE CRUMBS, SUGAR AND MARGARINE WITH A FORK.
POUR INTO 8 OR 9 INCH SPRINGFORM PAN AND PRESS ON BOTTOM AND
1 1/2 INCH UP SIDES.
FILLING:
1 1/2 LBS. CREAM CHEESE
3/4 C. SUGAR
1 TSP. CINNAMON
1/2 TSP. GINGER
1/4 TSP. CLOVES
1 1/2 C. PUMPKIN PUREE (1-1 LB. CAN)
4 EGGS
BEAT CREAM CHEESE UNTIL LIGHT. BEAT IN SUGAR, SPICES AND PUMPKIN, SCRAPING BOWL AND BEATER OFTEN. BEAT IN EGGS, SCRAPING OFTEN AGAIN. SCRAPE BATTER INTO PREPARED PAN.
BAKE AT 350 DEGREES FOR 60-70 MINUTES OR UNTIL CENTER IS SET. TURN OFF OVEN. LEAVING DOOR AJAR SLIGHTLY, LEAVE CHEESECAKE IN OVEN FOR 1 HOUR.
REMOVE FROM OVEN; COOL COMPLETELY. CHILL 4 HOURS OR OVERNIGHT.
