1 C. GOLDEN OR DARK RAISINS
1 TSP. VANILLA EXTRACT
1 C. SOFTENED BUTTER
1 1/3 C. PACKED BROWN SUGAR
3/4 C. GRANULATED SUGAR
2 1/2 C. ALL-PURPOSE FLOUR
1 TSP. SALT
1 TSP. GROUND CINNAMON
2 TSP. BAKING SODA
2 C. QUICK-COOKING OATMEAL
3/4 C. CHOPPED PECANS, OPTIONALRecipe
COMBINE EGGS, RAISINS, AND VANILLA IN BOWL AND LET STAND,
COVERED, FOR 1 HOUR.
PREHEAT OVEN TO 350 DEGREES. CREAM TOGETHER BUTTER WITH
SUGARS. ADD FLOUR, SALT, CINNAMON AND BAKING SODA. MIX WELL.
ADD RAISIN MIXTURE, OATMEAL AND PECANS (THE NUTS ARE
OPTIONAL). DON'T WORRY IF DOUGH SEEMS DRY.
DROP BY TABLESPOONFULS ABOUT 2 INCHES APART ONTO AN
UNGREASED COOKIE SHEET.
BAKE FOR 10-12 MINUTES, UNTIL LIGHTLY BROWNED.
COOL ON RACK.
MAKES ABOUT 30 COOKIES.
