1 TSP. GROUND CINNAMON, DIVIDED
1/2 TSP. SALT
1 EGG
1/2 C. MILK
1 C. FINELY CHOPPED APPLE (ABOUT 1 LARGE, PEELED AND CORED)
4 TBSP. BUTTER, MELTED
1/3 C. CHOPPED NUTS
1/4 C. FIRMLY PACKED BROWN SUGAR
Recipe
PREHEAT OVEN TO 375 DEGREES. IN A LARGE BOWL, COMBINE THE FLOUR, GRANULATED SUGAR, BAKING POWDER, 1/2 TSP. CINNAMON, AND SALT. IN ANOTHER BOWL, BEAT THE EGG WITH MILK, THEN STIR IN THE APPLE AND MELTED BUTTER; ADD ALL AT ONCE TO FLOUR MIXTURE AND STIR UNTIL JUST MOISTENED (BATTER WILL BE VERY STIFF). SPOON BATTER INTO A GREASED MUFFIN TINS, FILLING EACH CUP ABOUT 2/3 FULL. IN A SMALL BOWL, COMBINE NUTS, BROWN SUGAR, AND REMAINING 1/2 TSP. CINNAMON; SPRINKLE MIXTURE OVER MUFFIN TOPS. BAKE FOR 15 TO 20 MINUTES OR UNTIL WOODEN TOOTHPICK INSERTED IN CENTER OF A
MUFFIN COMES OUT CLEAN. REMOVE FROM PAN IMMEDIATELY AND SERVE WARM.
