1/2 TSP. SALT
1 TSP. ALLSPICE
1 TSP. CINNAMON
1 TSP. BAKING SODA
1 3/4 C. ALL-PURPOSE FLOUR
2 EGGS
1/4 C. VEGETABLE OIL
1 C. COOKED PUMPKIN, COOLED
1/4 C. MILK
1/2 C. WALNUTS, CHOPPEDRecipe
PREHEAT OVEN TO 350. LIGHTLY GREASE A 12-CUP MUFFIN TIN.
IN A LARGE MIXING BOWL, STIR TOGETHER SUGAR, SALT, ALLSPICE, CINNAMON, BAKING SODA, AND ALL-PURPOSE FLOUR. IN A SEPARATE BOWL, WHISK TOGETHER EGGS, VEGETABLE OIL, PUMPKIN, AND MILK. MAKE A WELL IN THE FLOUR MIXTURE; ADD THE BEATEN EGG MIXTURE AND WALNUTS. STIR JUST UNTIL INGREDIENTS ARE MOISTENED. BATTER SHOULD BE LUMPY. FILL PREPARED MUFFIN CUPS 2/3 FULL. BAKE FOR 25 MINUTES. MAKES 12 MUFFINS.
