2 TBSP. OLIVE OIL, DIVIDED
1 SWEET RED PEPPER, CORED, SEEDED AND
CHOPPED INTO SMALL PIECES
4 TBSP. FINELY CHOPPED ONION
1 TSP. FINELY CHOPPED GARLIC
1/4 TSP. GROUND CUMIN
SALT AND PEPPER, TO TASTE
1 TSP. LEMON JUICE
1 C. WATER, VEGETABLE OR CHICKEN BROTH
1 C. QUICK-COOKING COUSCOUS
4 TBSP. CHOPPED PARSLEYRecipe
1. HEAT 1 TBSP. OIL IN SAUCEPAN. ADD THE RED PEPPER, ONION, GARLIC, CUMIN, SALT AND PEPPER. COOK OVER MEDIUM HEAT UNTIL WILTED BUT NOT BROWNED.
2. ADD THE LEMON JUICE AND WATER OR BROTH; BRING TO A BOIL. ADD THE COUSCOUS; BLEND WELL. COVER TIGHTLY; REMOVE FROM THE HEAT. LET STAND 5 MINUTES.
3. ADD THE REMAINING OIL AND PARSLEY. STIR WITH A FORK TO BLEND AND SEPARATE THE GRAINS. SERVE IMMEDIATELY. SERVES 4.
