2 EGGS, SLIGHTLY BEATEN
1 CAN (16 OZ.) LIBBY'S SOLID PACK PUMPKIN (I PREFER FRESH)
1 CAN (13 OZ.) PET MILK
1 TSP. GROUND CINNAMON
1/2 TSP. GROUND GINGER
1/4 TSP. GROUND CLOVES
3/4 C. SUGAR
1/2 TSP. SALT
1 DEEP DISH PIE SHELLRecipe
PREHEAT OVEN TO 425 DEGREES. MIX FILLING INGREDIENTS, IN BLENDER, IN ORDER GIVEN. AFTER RECRIMPING EDGE OF PIE SHELL TO STAND 1/2 INCH ABOVE RIM, POUR FILLING INTO PIE SHELL. BAKE 15 MINUTES. REDUCE HEAT TO 350 DEGREES, CONTINUE BAKING 45 MINUTES, OR UNTIL KNIFE INSERTED NEAR CENTER OF PIE COMES OUT CLEAN. COOL COMPLETELY ON WIRE RACK. GARNISH WITH WHIPPED TOPPING, IF DESIRED.
NOTE: DOUBLE RECIPE MAKES 3 9" PIES.
