List of Ingredients
4 skinless, boneless chicken breasts
1 large green pepper, diced large
1 medium onion, diced large
1 ribs celery, diced large
Heaping tablespoon capers, drained
1 tsp. minced garlic
4 large tomatoes, diced large
1/2 c. fresh basil or 1 tsp. dried
1/4 c. fresh oregano or 1/2 tsp. dried
Salt & pepper, to taste
1/2 tsp. sugar
8 oz. canned chicken brothRecipe
Brown chicken in large frying pan sprayed with olive oil flavored Pam. Take chicken out of pan and put in the green peppers, onion, celery and capers, cook until the vegetables start to get soft, add garlic. Cook for a minute and then put in tomatoes, basil and oregano. Season with salt and pepper. Put in the sugar and chicken broth and put the chicken back in the pot, pushing it down into the sauce. Cover pan and let cook for 20 to 30 minutes. ENJOY!!!!!!
