    1/2 GAL. MILK
    1 1/2 C. SUGAR
    1 C. UNCOOKED LONG-GRAIN RICE
    2 EGGS
    1 TBSP. VANILLA
    1/2 C. RAISINS, OPTIONAL

    Recipe

    COMBINE MILK, SUGAR AND RICE IN A LARGE POT. BRING TO A BOIL, THEN REDUCE HEAT AND SIMMER FOR APPROXIMATELY 50 MINUTES. STIR OCCASIONALLY; DO NOT COVER POT.

    COMBINE EGGS AND VANILLA. BEAT WELL AND WHEN RICE MIXTURE IS CREAMY AND RICE IS SOFT, ADD A SMALL AMOUNT OF EGG MIXTURE TO RICE. STIR THOROUGHLY AND CONTINUE TO GRADUALLY ADD EGG MIXTURE TO RICE MIXTURE UNTIL ALL EGG IS USED. REMOVE FROM HEAT. ADD RAISINS, IF DESIRED. COVER AND STORE IN REFRIGERATOR, SERVE WHEN CHILLED. YIELDS 12 SERVINGS.
