1 pkg frozen spinach
1 c shredded cheddar cheese
1/2 c chopped onion or scallions
1 c Bisquick baking mix
1/2 t salt
1/4 t pepper
1 1/2 c milk
4 large eggs
Recipe
Heat oven to 400°F. Grease 24 mini muffin tins. In a bowl put spinach, cheese and onion or scallions. In blender, mix remaining ingredients. Combine wet ingredients with the other ingredients. Pour into tins 2/3 full. Bake about 35 minutes, or until knife inserted in center comes out clean.
