1/4 C. VEGETABLE OIL
1/2 CUP SUGAR
1 EGG, BEATEN
1 1/2 C. ALL-PURPOSE FLOUR
2 TSP. BAKING POWDER
1/2 TSP. BAKING SODA
1/2 TSP. SALT
1 1/2 C. MASHED RIPE BANANA (3-4 BANANAS)
1 TBSP. WATER
1 TSP. VANILLA
1 C. CHOPPED, PITTED DATE(1O OZ. CONTAINER IS ABOUT 1 1/2 CUPS) OR CRAISINS
1/2 C. CHOPPED NUTS
Recipe
PREHEAT OVEN TO 375 DEGREES. IN A LARGE BOWL, BEAT TOGETHER
THE OIL AND SUGAR. ADD THE EGG AND MIX WELL. IN A MEDIUM-SIZED BOWL, COMBINE THE FLOUR, BAKING POWDER, BAKING SODA AND SALT. IN ANOTHER BOWL, COMBINE THE BANANA, WATER, AND VANILLA. ADD BANANA MIXTURE TO THE OIL-AND-SUGAR MIXTURE ALTERNATELY WITH THE FLOUR MIXTURE, MIXING WELL AFTER EACH ADDITION. STIR IN THE DATES OR CRAISINS AND NUTS. TURN MIXTURE INTO A GREASED AND FLOURED 9X5 INCH LOAF PAN. BAKE FOR 50-55 MINUTES OR UNTIL A WOODEN TOOTHPICK INSERTED IN THE CENTER OF THE LOAF COME OUT CLEAN. COOL FOR 10 MINUTES, THEN REMOVE FROM PAN AND LET COOL ON WIRE RACK BEFORE SLICING. YOU CAN ALSO BAKE IN CUPCAKE PANS AND BAKE FOR 25 MINUTES.
NOTE: YOU CAN SUBSTITUTE CRAISINS FOR THE DATES. WE PREFER THE CRAISINS.
