3 C. OIL (HALF OLIVE OIL & HALF VEGETABLE OIL)
3/4 C. RED WINE VINEGAR
3/4 C. FRESH SQUEEZED LEMON JUICE
3 CLOVES MINCED GARLIC
3 TBSP. DIJON MUSTARD
4-5 MINCED SCALLIONS
SALT & PEPPER, TO TASTE
Recipe
PUT IN BLENDER AND BLEND TIL SMOOTH.
VARIATIONS: STEAM GREEN BEANS AND CHILL. PUT RED ONION IN
WITH GREEN BEANS. MIX 1/2 CUP VINEGARETTE AND ADD PINCH OF
DILL. MIX TOGETHER AND PUT OVER BEANS AND ONIONS.
BEETS AND APPLES - ADD 1/2 TSP. CURRY POWDER AND 1 TBSP. HONEY. MIX AND PUT OVER BEETS AND APPLES.
SLICED TOMATOES - 3/4 C VINEGARETTE IN BLENDER WITH 1/4 C.
CRUMBLED FETA OR PARMESAN CHEESE AND POUR OVER TOMATOES.
SPRINKLE ON PARSLEY AND BASIL.
