    1 CUCUMBER, CHOPPED FINE
    2 BUNCHES PARSLEY, CHOPPED FINE
    1 1/2 C. GREEN ONION, CHOPPED FINE
    1 1/2 TOMATOES, CHOPPED FINE
    2 TBSP. MINT, OPTIONAL
    4 TSP. SALT
    1/4 TSP. PEPPER
    2/3 C. LEMON JUICE, FRESH
    2/3 C. OLIVE OIL AND VEGETABLE OIL, MIXED

    SOAK BULGAR WHEAT IN WARM WATER UNTIL SOFT. SQUEEZE OUT
    BULGAR WHEAT IN YOUR HAND AND ADD TO TABOULI. MIX ALL BUT
    DRESSING TOGETHER. MIX LEMON JUICE, OIL, SALT AND PEPPER
    TOGETHER WITH WHISK. POUR OVER VEGETABLES AND MIX WELL.
    CHILL AND SERVE WITH PITA BREAD.
