BRING BEANS AND WATER TO A BOIL. SIMMER FOR 2 MINUTES.
LET STAND, COVERED, FOR 1 HOUR.
ADD:
3 C. WATER
HAM HOCKS OR DICED HAM
1 PEELED AND DICED TOMATO
1/8 C. VINEGAR
1 TBSP. SUGAR
2 1/2 TSP. SALT
PEPPER, TO TASTE
1 C. DICED ONION
2 DICED CARROTS
2 DICED POTATOES
COVER AND SIMMER FOR 3-3 1/2 HOURS.
