    1/3 C. RICE
    2 EGGS
    3 TBSP. LEMON JUICE
    ZEST OF 1/2 LEMON
    SALT & PEPPER, TO TASTE

    BRING BROTH TO BOIL. PUT IN RICE AND COOK TIL RICE IS COOKED, SCRAMBLE EGGS, LEMON JUICE AND ZEST, TURN OFF BURNER SO THAT SOUP IS NOT BOILING, PUT A COUPLE OF LADLES FULL OF HOT BROTH IN EGG MIXTURE, POUR ALL AT ONCE INTO SOUP IN PAN TO THICKEN SOUP, IF NECESSARY, USE CORNSTARCH AND WATER TO THICKEN FURTHER.
