Herb-Marinated Shrimp

Makes 4 servings,
3 points per serving
List of Ingredients
1/3 c. fresh basil leaves
1/4 c. fresh mint leaves
2 tbsp. fresh oregano leaves
1/2 tsp. salt
1/4 tsp. pepper
3 garlic cloves, halved
2 1/2 tsp. extra-virgin olive oil
1 1/2 lbs. large shrimp, peeled

Recipe
1. Combine first 6 ingredients in a food processor, and pulse until mixture is coarsely chopped. Add olive oil, and process until well blended.
2. Combine herb mixture and shrimp in a large bowl, and toss to coat. Cover and marinate shrimp in refrigerator 30 minutes.
3. Thread shrimp onto 12 (6") skewers.
4. Prepare grill. Place skewers on grill rack coated with cooking spray; grill 3 minutes on each side or until done. Yield: 4 servings (serving size: about 4 oz.). Serve with Pan-Roasted Corn Salsa.
NOTE: To prepare indoors, place a large grill pan over medium-high heat until hot; coat grill pan with cooking spray. Place 6 skewers on grill pan, and cook 3 minutes on each side or until done. Repeat procedure with remaining skewers.
