    List of Ingredients


    • 2 cups Fiber One Bran Cereal
    • 1 cup milk or buttermilk
    • 2 egg whites or 1 egg
    • 1 can (15-ounce) pumpkin
    • 1 teaspoon pumpkin pie spice
    • 1 teaspoon cinnamon
    • 1/4 cup brown sugar
    • 1/2 cup Splenda
    • 1 1/4 cups self-rising flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt


    Instructions


    1. Preheat oven to 375 degrees. Spray 12 muffin tins with cooking spray.
    2. Mix together cereal and milk in a large mixing bowl and let stand 10 minutes. Add eggs and pumpkin and mix well.
    3. Mix dry ingredients well in a separate bowl.
    4. Combine dry ingredients into wet ingredients. Do not over mix. Divide batter into 12 muffin tins. Muffin tins will be full.
    5. Bake for 18 minutes. Refrigerate when cool.
