List of Ingredients
- 2 cups Fiber One Bran Cereal
- 1 cup milk or buttermilk
- 2 egg whites or 1 egg
- 1 can (15-ounce) pumpkin
- 1 teaspoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1/4 cup brown sugar
- 1/2 cup Splenda
- 1 1/4 cups self-rising flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375 degrees. Spray 12 muffin tins with cooking spray.
- Mix together cereal and milk in a large mixing bowl and let stand 10 minutes. Add eggs and pumpkin and mix well.
- Mix dry ingredients well in a separate bowl.
- Combine dry ingredients into wet ingredients. Do not over mix. Divide batter into 12 muffin tins. Muffin tins will be full.
- Bake for 18 minutes. Refrigerate when cool.
