Frijole filled corn muffins

this can be served as an appetizer or breakfast/ brunch dish
List of Ingredients
1 cup cornmeal
1 cup flour
2 tbsp brown sugar
4 tsp baking powder
1/2 tsp salt
1 cup milk
1/4 cup shortening
1 egg
1 can refried beans cooked a little water added
1 cup shredded cheddar cheese
1 4 oz can ortega diced green chiles
12 muffin cupsRecipe
heat oven to 400
blend, cornmeal, flour, sugar, baking powder, salt, milk shortening, egg and chiles, together in a food processor, or with mixer about 30 seconds.
put a little of the corn mixture in each ungreased muffin cup, then a little of the refried beans into each one, then a little of the cheese into each one, then top off with the rest of the corn muffin mixture on each one.
bake for 20 mins.
makes 12 muffins
