List of Ingredients
4 skinless boneless chicken breasts halves
8 slices bacon
1 cup shredded cheddar cheese
1 cup shredded Monterey jack cheese
½ cup finely chopped onions
1 ½ cups of milk in bowl
2 cups flour
1 teaspoon salt
dash of pepper
12 toothpicks
2 large zip loc bags
Recipe
place 1 chicken breast in large Ziploc bag, pound with meat mallet til about ¼ inch thick, put ¼ cup of cheddar and ¼ cup of jack in center of pounded chicken, sprinkle some onions over cheese, roll chicken up in jelly roll style, wrap chicken with 2 slices of bacon
overlapping them if need be, put 3 toothpicks in wrapped chicken 1 inch apart, to hold rolled chicken together, get the other Ziploc and put flour salt and pepper together shake well to blend, dip rolled chicken piece in to milk , then put in bag with flour shake til chicken piece is well coated.
Repeat with other chicken pieces.
Bake at 350 for 45 – 60 mins or til bacon starts to get crispy and crust gets golden.
