Marinated Cheese with Pepper & Olives

1/2 C. olive or vegetable oil
20 oz. cheddar cheese
1 large red bell pepper cut into 3/4 inch pieces
1 14oz. can whole pitted ripe olives, drained
2 T. white vinegar
2 t. italian seasoning
1 t. finely chopped garlicRecipe
Stir together all ingredients in a large bowl and cover. Refrigerate at least 4 hours or overnight.
