    Carrot Cake

    List of Ingredients




    1/3 C. boiling water
    2 C. finely shredded carrots
    2 C. flour
    1 1/4 C. sugar
    1 1/4 t. baking soda
    salt
    1 t. cinnamon
    1 t. nutmeg
    1/2 C. oil
    3 eggs
    1 t. vanilla

    Recipe



    Pour boiling water over carrots. Beat carrots and remaining ingredients scrapping the bowl constantly for 1 minute. Beat on medium speed for 2 minutes, scrapping the bowl occasionally. Pour into a greased and floured cake pan. Bake until toothpick inserted comes out clean, 45-50 minutes. Frost with cream cheese frosting.
