Rhubarb Coffee Cake

List of Ingredients
1 1/2 C. brown sugar
3 C. cut up rhubarb
2/3 C. applesauce
3/4 C. buttermilk
1 egg
1 t. vanilla
1 t. cinnamon
1 t. baking soda
3 C. flour
1 t. salt
Topping:
1 C. brown sugar
1/2 C. flour
1/4 C. margarine, softened
Recipe
Preheat oven to 325*. Combine br. sugar, applesauce, buttermilk, egg and vanilla; mix well. Add flour, baking soda and salt and mix well. Fold in rhubarb. Pour into greased 9x13 pan. Mix together the ingredients for topping and sprinkle over top of the cake. Bake 50-60 minutes or until tester comes out clean.
