Pistachio Pineapple Dessert
List of Ingredients
2 C. vanilla wafer crumbs
1/2 C. plus 3 T shelled, chopped pistachio nuts
1/4 C. margarine or butter, melted
1 8oz. pkg. cream cheese, softened
1 14oz. can sweetened cond. milk
1/4 C. lime juice
1 (4 seving size) pkg instant pistachio flavor pudding
1 8oz. can crushed pineapple, undrained
1 C. (1/2 pint) whipping cream, whipped Recipe
Preheat oven to 350*. Combine crumbs, 3 T nuts and margarine; press firmly into the bottom of a 9 inch springform pan or a 9x13 inch baking pan. Bake 8-10 minutes. Cool. Meanwhile, in a large mixing bowl, beat cream cheese until fluffy. Gradually beat in sweetened cond. milk then lime juice and pudding mix until smooth. Stir in remaining 1/2 C nuts and pineapple. Fold in whipped cream. Pour into prepared pan. Chill 6 hours or overnight.
Refrigerate leftovers.
