    Pumpkin Roll

    List of Ingredients




    3 eggs
    1 C gran. sugar
    2/3 C pumpkin
    1 t lemon juice
    3/4 C flour
    1 t baking powder
    2 t cinnamon
    1 t ginger
    1/2 t nutmeg
    1/2 t salt

    Filling:
    8 oz cream cheese, softened
    4 T butter, softened
    1 C powdered sugar
    1/2 t vanilla

    Recipe



    In a lg bowl combine eggs and gran. sugar,beat well. Add pumpkin and lemon juice mixing until well blended. In a seperate bowl combine flour, baking powder, spices and salt. Add to egg mixture mixing well. Spread batter into a greased and waxed paper lined 10x15 jelly roll pan. Bake for 15 minutes at 375*. Remove from oven. Cool for 15 minutes. Place cake on a clean tea towel, sprinkled with a little powdered sugar. Cool 10 minutes. From the 10 inch side roll cake up in the towel.Make the filling.
    Beat the cream cheese and butter. Stir in powdered sugar and vanilla. Blend until smooth. Unroll the cake. Evenly spread filling over cake. Roll up cake. Wrap in plastic wrap. Cover and chill at least 1 hour
