Tomato Soup with Pasta & Basil
List of Ingredients
3 large very ripe tomatoes
2 T. olive oil
1 sm. onion, finely chopped
1 clove garlic, crushed
4 C. chicken broth
1/4 C. (2oz.) tomato paste
1 t. sugar
1/4 C. fresh basil leaves
1 C. shell pasta or macaroni
Recipe
Remove the skins and seeds from tomatoes and roughly chop. Heat the oil in a large heavy based pan and cook onion and garlic, stirring for 10 minutes, or until soft. Add tomato and cook for another 10 minutes. Add broth, tomato paste, sugar and salt and pepper to taste. Cover and simmer for 15 minutes. Remove from heat and add basil leaves. Allow to cool slightly before processing mixture, in batches, in a food processor or blender. Return the mixture to the pan and reheat gently. While soup is cooking, add the pasta to a large pan of rapidly boiling salted water and cook until al dente. Drain, add to the soup and heat through.
